Easy Strawberry Banana Bread
Okay so I’ll start out by saying, this truly is easy, and really only came together because I refuse to let strawberries go bad.
3 Ripe Bananas
1/2 cup Brown Sugar
1/2 cup of Melted Butter
1 cup Sour Cream
1 tea spoon of Vanilla Extract
1 table spoon of Baking Soda
2 cups Flour
1 1/2 cups of cut up small Strawberries
Mash your bananas in a bowl, I do this with a big salad fork. Add in your melted butter, vanilla extract, eggs, sour cream, sugar, and mix up until a consistent texture throughout. It will be banana lumpy and such but thats all good.
Add in your 2 cups of flour, I like to use white flour, cause you know nothing is better than good ol white bread. Before you mix in your flour to the wet ingredients, add your baking soda on top of the flour, that way it will distribute better when you mix.
Once your batter is all mixed the last thing you add is your small chopped strawberries, and gently mix into batter.
Grease an 8”x8” pan with butter or spray, and line the bottom with a piece of parchment paper, this helps it come out the pan easy peasy.
Bake at 350* for 35 mins, you can leave it in longer if its not toasting too much, or I like to turn it down to 300* and leave it for another 15mins
[I will add that you an easily make this recipe vegan! Trade the the eggs for an extra banana mircowaved to soften, vegan butter, and skip the sour cream altogether or add a little nut milk for better texture if needed.]
